Spicy Pineapple & Orange Jam

A delicious and easy jam inspired by Sri Lankan flavours.

Ingredients:

  • One large pineapple, outer peels cut away and chopped as much/little as you like.

  • 4 to 5 large oranges, cut into quarters, and blitzed whole (yes whole) in a food processor.

  • Sugar- 50% of the weight of the total fruit.

  • Per 1000g of pineapple use
    -1tsp ground ginger
    -2inch fresh piece of ginger
    -1/2tsp black peppercorns, coarsly ground
    -1 tsp salt


  • Prepare your jam jars by sterlising in hot water

  • Put all ingredients in a large pot, and bring to a quick boil over high heat.

  • Immediately lower the heat to medium-low and cook while stirring occasionally, until the jam is thickened to the consistency you like. (Mine took about 30 minutes of slow cooking.)

  • Spoon into jam jars while still hot, and seal with lids.
