Banana Pineapple Tropical Muffins

One of our favourite bakings! These will blow your hand-knitted socks off!
Daki’s-Banana-Pineapple-Island-Girl-Muffins.

(because we love short and sweet names)


Ingredients:

  • 300g flour

  • 150g sugar

  • 2tsp baking powder

  • 1tsp baking soda

  • 1tsp cinnamon

  • 1tsp cloves

  • 1tsp ginger

  • 1tsp salt

  • 3 bananas

  • 113g unsalted butter, melted

  • 30ml brown rum

  • 30ml applecider-vinegar

  • 200ml coconut milk

  • 2 eggs

  • 400g pineapple chunks, preferably fresh, but canned will do too.


  • Preheat the oven to 425F/220C

  • Mix all dry ingredients together in a large mixing bowl.

  • Caramelize the bananas in about 1 tsp of butter.

  • Gently beat together all wet ingredients in a seperate bowl, including the caramelized banana and melted butter.

  • Make a well in the center of the dry ingredients and pour in the wet. Mix together gently untill well combined.

  • Fold in the pineapple chunks.

  • Pour the mixture into 6 lined jumbo muffin pans.

  • Pop into the oven and immediately lower the temperature to 400F/200C.

  • Bake for approximately 25 minutes, but be sure to check at 20.

  • When done, pop onto baking rack and let sit for at least 5 minutes. It’s hard, I know, but they’ll be even better that way… no… don’t touch yet.
