Banana Pineapple Tropical Muffins
One of our favourite bakings! These will blow your hand-knitted socks off!
Daki’s-Banana-Pineapple-Island-Girl-Muffins.
(because we love short and sweet names)
Ingredients:
300g flour
150g sugar
2tsp baking powder
1tsp baking soda
1tsp cinnamon
1tsp cloves
1tsp ginger
1tsp salt
3 bananas
113g unsalted butter, melted
30ml brown rum
30ml applecider-vinegar
200ml coconut milk
2 eggs
400g pineapple chunks, preferably fresh, but canned will do too.
Preheat the oven to 425F/220C
Mix all dry ingredients together in a large mixing bowl.
Caramelize the bananas in about 1 tsp of butter.
Gently beat together all wet ingredients in a seperate bowl, including the caramelized banana and melted butter.
Make a well in the center of the dry ingredients and pour in the wet. Mix together gently untill well combined.
Fold in the pineapple chunks.
Pour the mixture into 6 lined jumbo muffin pans.
Pop into the oven and immediately lower the temperature to 400F/200C.
Bake for approximately 25 minutes, but be sure to check at 20.
When done, pop onto baking rack and let sit for at least 5 minutes. It’s hard, I know, but they’ll be even better that way… no… don’t touch yet.
